Leftovers.
oh_
Nothing in the house. Fridge is condiments, a container of leftover rice, and a single breaded chicken strip. Freezer is half a bag of peas and carrots and corn. Dinner, then.
Hot pan first. Wok, high heat, more oil than feels right. Shimmer, not smoke.
Cold rice in. Break the clumps, press flat, let it hiss, then stir. Fresh rice steams. Yesterday's rice fries.
Frozen vegetables straight from the bag. They thaw in ninety seconds.
Soy sauce around the rim of the pan, not on the rice. Let it sizzle, then toss. The rice turns the color of an old penny.
Chicken last, and briefly. The crust has forty seconds of life left in a wet pan. Lay it on top, give it thirty, fold.
Egg cracked into a well in the middle. Let the yolk sit there a second, then break it and fold everything through. Glossy, coats the grains. This is the whole trick.
Sriracha. Evenly spaced. Like a signature.
